In this blog, I have mentioned some of the most refreshing and mouth watering dishes.

1. Tapioca Sago Croquettes

Samvat pulao also known as vrat (fast) ke pulao is prepared during navratri or ekadashi fasting.

Sama / samvat is deemed to be vrat ke chawal. While fasting we forbear from having cereal grains thus to make dishes based on rice we use samvat / sama grains in lieu of rice.

This species of rice do not belong to the category of rice or even related with rice and they belong to the millet family. In english, sama ke chawal is known as barnyard millet. 3. Paneer Kofta

Paneer kofta is quite a protein rich source for vrat/fasting for navratra season. It is similar to our regular kofta but for fasting you need to replace the corn flour with any of the fasting flours such as arrow root flour, water chestnut flour/ singhare ka atta, buckwheat flour/kuttu ka atta .

4. Rajgara Kadhi

Rajgara Kadhi or vrat ki kadhi recipe spiced yogurt sauce and mildly flavored created for navratra fasting.

It takes hardly 15 minutes to prepare this savory food. amaranth flour is used in lieu of besan/gram flour which is the key ingredient in the regular kadhis. This kadhi is served with sama pulao, sama khichdi, kuttu ki khichdi, rajgira paratha, plain sama rice, rajgira pooris or kuttu ka parathas .
